It is a specialty of the Berlin area, of which the first mention of its recipe is recorded in 1642; and later Napoleon's troops called it the "Champagne of the North" for its lively and elegant character. At the end of the 19th century it was the most popular alcoholic drink in Berlin. Currently only one brewery produces it in the region; but many international breweries continue to produce this style. The distinctive feature of the Berliner Weisse is the taste of lactic acid. This is obtained from the fermentation that is made with a mix of yeast and lactic acid bacteria.
