Vegetables and salads are a world of creativity: due to their colors, varieties, the different mixtures that result in exquisite and very original flavors. In general, they are light, soft dishes, with touches of oil and thousands of possibilities as condiments.
Many would find a slightly different pairing of these products with beer, but it may come as a very pleasant surprise as, just like salads, craft beers are also very versatile:
Belgian Blond Ale: also known as Golden Ale, are smooth beers, medium bitterness, low/moderate initial sweetness (you can feel the hint of caramelized sugar or honey-like sweetness on the palate). Perfect pairing with salads that contain beetroot.
Bohemian Pilsen: in general it is rich in aroma, refreshing and with a marked presence of malt flavor, with a pronounced bitterness, which is what predominates but is not aggressive. It has a dense white foam and combines very well with chickpea salads and different types of leaves.
Doppelbock: a slightly complex style, full-bodied, low in bitterness, but with rich malt flavor, very traditional to the Munich Brewing School. Darker versions have a more toasty or fruity (raisin or plum) flavor. Try it while eating beets in different styles: beetroot hummus, steamed.
