The craft brewing world is very creative, not only because of the infinite ways to brew beer, but also because of the thousands of possibilities to merge different styles and create new ones. A good example of this is the new Cold IPA trend, which on the one hand is not yet recognized in the Beer Judge Certification Program (BJCP) guidelines, but the market has started to develop it and it has been gaining a lot of attention:
- The term " Cold IPA " suggests a beer that combines elements of IPAs (Indian Pale Ales) with a focus on lower fermentation temperature, which is a common feature in lagers.
- The lower fermentation temperature could contribute to better beer clarity and retention, as found in many lagers.
Important : As this is not an officially recognized category of beer in the BJCP guidelines at this time, the definition of its visual characteristics, aromas, flavors or numerical values is impossible to describe.
Pairing with IPA beers
For pairings, if we envision a beer with IPA- like characteristics and cold fermentation, we could make some suggestions for pairings that could complement the typical characteristics of an IPA along with the refreshing qualities of cold fermentation:
- Spicy Chicken Wings: The intensity of spicy chicken wings can contrast with the bitter and citrus flavors of the IPA, while cold fermentation could help refresh the palate between spicy bites.
- Fish Tacos: The fresh and crisp flavors of fish tacos can be complemented by the citrusy and herbal undertones of the IPA beer. Cold fermentation could also bring out the fresh flavors of the ingredients.
- Cheddar Burger: The beer IPA could balance the rich flavors of a burger and cheddar with its bitter and citrus notes. Cold fermentation could bring a refreshing sensation.
- Pepperoni Pizza: The combination of spicy and salty flavors of the pepperoni can be counterbalanced by the bitterness and citrus aromas of the IPA. Cold fermentation could help keep the palate clean.
- Grilled Chicken Salad: The freshness of a grilled chicken salad can be enhanced with the citrus and herbal undertones of the IPA. Cold fermentation could make the beer even more refreshing.
- Intense Cheeses: The bitterness of the IPA could contrast and complement the intense flavors of cheeses such as blue cheese or aged cheese. Cold fermentation could balance out the experience.
- Sushi: The delicate flavors of sushi can be enhanced by the citrus and floral nuances of the IPA.
